Golden Cauliflower Ginger Soup
(Instant Pot Recipe)

This soothing soup is one of my favorites when I want something light, nourishing, and easy. The cauliflower gives it a soft creaminess, while the fresh ginger brings warmth and a gentle lift. It’s grounding, simple to make in the Instant Pot, and perfect for quiet evenings or a cozy lunch.

Made with just a few ingredients — cauliflower, ginger, onion, garlic, coconut milk, and a touch of turmeric — it’s comfort food that feels clean and restorative. Serve it with a sprinkle of herbs (I used scallions) and some toasty bread.

Prep time: 10 minutes
Cook time: 15 minutes

Ingredients:

  • 1 tbsp butter or olive oil

  • ½ medium onion, chopped

  • 2 cloves garlic, minced

  • 1 Tbsp fresh ginger, grated

  • 3 cups cauliflower florets (about ½ a small head)

  • ½ medium carrot, sliced

  • 2 cups vegetable broth (or chicken broth)

  • ½ cup coconut milk

  • ¼ tsp turmeric

  • ¼ tsp sea salt (or to taste)

  • Pinch of black pepper

  • Juice of ¼ lemon

  • Fresh cilantro or scallions, for garnish

Instructions:

  1. Set Instant Pot to Sauté. Add butter or oil, then onion. Cook 4-5 minutes until the onions have a nice smell. Stir in garlic, ginger, and turmeric. Cook about a minute until fragrant.

  2. Add cauliflower, carrot, salt, pepper, and broth. Stir well and cancel Sauté.

  3. Secure the lid, set valve to Seal, and cook on High Pressure for 6 minutes. When the timer is done, quick release the pressure.

  4. Add coconut milk and lemon juice.

  5. Use an immersion blender to puree until silky smooth.

  6. Taste and adjust seasoning. Garnish with herbs or a sprinkle of black pepper and serve.
